Mama Hope’s Mostly Healthy Oat Bars
Here’s a recipe for some yummy but healthy oat bars. My 12-year-old son loves them, and they’re packed with immune-boosting brain food too!
I use cashews, since my son is allergic to every other type of nut, but of course you can substitute any type of nut you’d like. I’ve also done them with chocolate chips!
Mostly Healthy Oat Bars Recipe
1-1/4 cups rolled oats
1 cup whole wheat flour
1/2 cup chopped cashews
3/4 cup wheat germ
2 Tablespoons flax seed
pinch baking soda
2 Tablespoons vegetable oil
2 Tablespoons coconut oil
1/2 stick butter
1/4 cup brown sugar
1 Tablespoon molasses
1 Tablespoon honey
3/4 cup frozen raspberries
1/3 cup boiled water
Preheat oven to 350 degrees Fahrenheit. Mix the dry ingredients in a large boil. In a saucepan over medium heat, melt together the butter, oils and sweeteners (not including raspberries). Add melted oils and sweeteners to dry ingredients and mix.
In a separate container, add boiling water to raspberries. Stir using metal spoon, breaking raspberries into smaller pieces. Add raspberry/water mixture to bowl and stir. Press mixture into lightly oiled baking pan, to form layer about 1-1/2 inches thick. Cook approximately 30 minutes or until golden brown. Remove pan from oven and cut into squares in pan while cooling.
Remove squares from pan after cooling and enjoy! Store in airtight container. Store in refrigerator during hot weather or if keeping longer than two days.
