Miso Magic Dressing

This recipe is my adaptation of Joe Terry’s Miso Magic Dressing from A Cookbook for All Seasons (aff). I just had it with today’s healthy lunch! Miso Magic Dressing Recipe

3-4 cloves garlic
1/4 cup rice vinegar
1/2 cup water
1/4 cup red miso (aged and unpasteurized)
1 teaspoon store-bought mustard (check the ingredients and skip the preservatives, should be possible with mustard due to its vinegar content)
1/8 cup olive oil

In a blender, add garlic cloves, vinegar and water. Blend until garlic is in teensy tiny bits. Add mustard, miso, and olive oil and blend again until smooth.

Store refrigerated in a salad dressing container or tupperware. Pour over salads or steamed veggies and say “MMMMM”!
